Founded in memory of Carlos Montoya, our beloved founder and visionary, Papi’s Pollo was created to be more than just a “pollería.” Carlos dreamed of a place where people could experience the depth and diversity of Peruvian cuisine—not just the rotisserie chicken it’s known for, but a curated menu of flavorful, traditional dishes crafted with care and consistency.

Our philosophy is simple: quality over quantity. By focusing on a streamlined selection of dishes, we ensure every plate is prepared with exceptional taste, skill, and heart. From wok-fired favorites like Peruvian Fried Rice and Tallarín Saltado, to beloved staples like Lomo Saltado and Bistec a lo Pobre, our kitchen delivers bold flavors that honor Peru’s culinary heritage.
